Markus Pfalz: “Our nature-loving, sustainable winery is family-owned since 1610 and is currently in the process of converting to organic farming. In the vineyard, we promote biodiversity and species diversity, particularly through species-rich greenings, the construction of deadwood piles, stone piles, insect hotels, birdhouses, and the planting of trees and shrubs. Gentle pruning, breaking of shoots and grapes, careful hand-picking, careful processing in the cellar, and extended ageing on the lees make our wines storeable and animating.”
